Ingredients
2 cups uncooked rigatoni pasta
2 tsp canola oil
1/2 med onion diced
1/2 lb chorizo sausage, casings removed, sliced
796ml Italian-styled stewed tomatoes
6 oz bag baby spinach
1/3 cup fresh grated parmesan cheese
Method
Cook rigatoni pasta according to package directions. Set aside.

Meanwhile, heat oil in a large skillet over medium heat. Add the onions and cook until softened, about 5 minutes. Add the sausage and cook unitl browned 5-7 minutes. Add the spinach and canned tomatoes and cook, tossing frequently until the spinach wilts, about 4-6 minutes. It may seem impossible to stir in all of the spinach, but be patient, as spinach will shrink in size as it cooks.

Divide the pasta among individual bowls, top with spinach and sausage sauce and sprinkle with parmesan.

Makes 4 servings.
